Toby is the backbone of specialty coffee and direct trade in Australia. In January of this year he opened a café in Brooklyn, New York with his Australian partners (with in-house roasting and cupping classes). It is designed by Nema Workshop, with a menu designed by Katy Sparks. They do in-house roasting every Wednesday and Sunday, and use the popular new brewing methods in the US (V60 & Chemex).
